RECIPE: Salt and pepper chips (Syn free)

These are Syn free and a perfect side for your Chinese fakeaway. On EESP days I just swap the potato for butternut squash.
1 large potato (or 1/2 butternut squash) cut into batons
1 onion, thinly sliced
1/2 red pepper, thinly sliced
1/2 green pepper, thinly sliced
1 tsp garlic
2 tsp soy sauce
2 tsp white wine vinegar
1 tsp Chinese 5 spice
1/2 tsp chilli powder
Par boil the potatoes (if I’m using butternut squash I microwave it for 5 mins I stead of boiling)

Spread potato (or butternut squash) out on a baking tray, sprinkle with chip seasoning (the Schwartz one is Syn free) and spray with fry light

Bake on 180 for 25 minutes

Sauté the veg in a frying pan, add chilli, garlic, soy sauce, 5 spice and vinegar

Keep stirring until all mix is thickened

Spread vegetable mix over top of chips. Turn temperature down to 150 and bake for another 5 minutes
