RECIPE: Syn free pesto 

I LOVE pasta and pesto, its one of my favourite comfort foods that’s quick and easy to prepare. But because its made with oil and Parmesan cheese it can be quite high in syns so after a bit of experimenting I’ve come up with a recipe that does the job as well as the jarred stuff but is syn free and EESP friendly.
Ingredients

1 large handful of basil (or 2 tsp dried basil)
1 large handful of spinach
1 tsp dried mint
1 large tsp garlic
1 tsp salt
3 tsp lemon juice
2 dessert spoons of quark
Pinch of black pepper

Method

Blend all the ingredients in a blender or a food processor then stir through cooked pasta or courgetti!
