RECIPE: slow cooker fajita chicken (SYN FREE)


4 chicken breasts (or 8 thighs)

1 can chopped tomatoes

1 onion (diced)

Red, yellow and green pepper (one of each, sliced)

3 tsp garlic powder

1 tsp coriander
3 tsp ground cumin

2 tsp paprika

1 tsp salt

1 chicken oxo cube

  1. spread half the can of tomatoes in the bottom of the slow cooker, lay the chicken on top
  2.  mix together the oxo cube, salt, paprika, cumin, coriander, and garlic powder and sprinkle on top of chicken breast
  3. Spread half the onions and peppers over and around the chicken
  4. Add another layer of tomatoes then the rest of the peppers and onions
  5. Cook for 4-6 hours then shred the chicken

Alternatively you can just add all the ingredients to an oven dish and bake for 30-35 minutes (depending on size of chicken breasts)
