4 chicken breasts (or 8 thighs)
1 can chopped tomatoes
1 onion (diced)
Red, yellow and green pepper (one of each, sliced)
3 tsp garlic powder
1 tsp coriander
3 tsp ground cumin
2 tsp paprika
1 tsp salt
1 chicken oxo cube
- spread half the can of tomatoes in the bottom of the slow cooker, lay the chicken on top
- mix together the oxo cube, salt, paprika, cumin, coriander, and garlic powder and sprinkle on top of chicken breast
- Spread half the onions and peppers over and around the chicken
- Add another layer of tomatoes then the rest of the peppers and onions
- Cook for 4-6 hours then shred the chicken
Alternatively you can just add all the ingredients to an oven dish and bake for 30-35 minutes (depending on size of chicken breasts)
