RECIPE: Syn free lime curd

I love this as a filling to my grape nut pie or to go with baked oat waffles!


2 limes

4 Tbs sweetener 

2 eggs

2 Tbs quark

  1. Break the eggs into a bowl over a simmering pan of water, gently whisk
  2. Add the sweetener with the juice and rind of the limes to the egg and continue to whisk for 2 minutes
  3. Add the quark and continue to mix until the mixture thickens 
  4. Transfer into an airtight container and keep in the fridge
