Cod in a tomato and thyme sauce (serves 2, syn free)


1 onion finely chopped

1 can of chopped tomatoes or 1 carton pasata
2 tsp granulated sweetener
2 tsp dried thyme
1 tsp garlic
1 tbs soy sauce
2 cod fillets (or other flaky white fish, I used basa)

  1. Heat the onion until softened in a pan with a spray of frylight, for 5-10 minutes. Then add the tomatoes (or pasata) sweetner, thyme and soy.
  2. Bring to the boil then leave to simmer for 5 minutes (allowing the sauce to thicken slightly)
  3. Place the fish fillets into the sauce then place a lid on the pan so the fish can steam for 8-10 minutes (until cooked).

I served with roasted veg, broccoli and potato slices.
