I’m not one of the mums who doesn’t let her child eat sweets or unhealthy foods but as I’m someone who has always struggled with their weight, I do watch what I give him and try and get the balance right.
Oliver loves chicken nuggets so I thought I would have a go at making them myself, they were a huge hit and I will define be making them again!
1 chicken breast fillet chopped into bite size pieces
2 slices of wholemeal bread, made into bread crumbs (chuck them in the food processor or blender)
Fry light or oil spray
1 egg beaten
- Dip the chicken pieces into the egg
- Then Dip them in the breadcrumbs and put on an oiled (or fry lighted) tray
- Bake on 200 for 20-25 mins (until chicken is cooked through)
I served Olivers with home made oven baked chips and baked beans
