RECIPE: cauliflower and courgette pizza (Syn free)

Ingredients

1 and 1/2 cups grated or ground cauliflower

1/2 cup grated courgette

1 egg

1 tsp ground garlic

1/2 tsp salt

2 tsp Italian herbs

Tomato purée

Mozzarella cheese (42g can be used as Healthy extra A)

Toppings of choice (my faves are ham and mushroom or tuna and onion)

  1. Microwave the cauliflower and courgette for 4 minutes
  2. Add the egg, garlic, salt and Italian herbs and mix
  3. Spray a lined baking tray with frylite
  4. Spread the mix on a baking tray, about the thickness of a £1 coin
  5. Spray with a bit more frylite
  6. Bake at 180 for about 20 mins. This will vary depending on the oven and thickness of the mix, just take it out when it’s golden
  7. Flip the base, spread with tomato purée, add toppings and bake for another 10 mins

I like to serve mine with sweet potato chips or carrot chips if I’m doing an extra easy SP day
