This has become one of my favourite recipes over the last couple of years, because it’s quick, easy, and I know it’s full of foods which will help on my weight loss journey!
Ingredients
2 salmon fillets
1 red pepper
1 onion
1 courgette
Mushrooms
Tomatoes
4 tbs soy sauce
1sp ginger paste
2 tsp garlic
- Chop the veg and spread on a baking paper lined tray
- Clear a space in the middle of the tray and add the salmon fillets, skin side down
- Mix the soy sauce, ginger and garlic together and pour over the veg and salmon
- Bake on 180 for 15-20 minutes
It’s as easy as that! This is delish on its own but I love to flake the salmon up and stir through with noodles
