I love chilli, but I am not overly keen on the firmer texture of kidney beans, so I swap them for refried beans in my syn free chilli con carne recipe.
Ingredients
1 white onion
1 red pepper
500 extra lean beef mince
2 tsp crushed garlic
1 tsp chilli powder
1 tsp smoked paprika
½ tsp cayenne pepper
Beef stock cube
1 tsp sweetener
1 tsp Worcestershire sauce
1 carton of pasata
2 tbs tomato puree
1 can of refried beans
- Finely dice the pepper and onion and fry in frylight until the onions are softened.
- Add the minced beef, garlic, chilli powder, paprika and cayenne pepper. Stir continuously to stop the mince sticking to the bottom of the pan. Use a wooden spoon or spatula to break any larger chunks of mince up.
- Add the pasata, stock cube, Worcestershire sauce, tomato puree and 200ml of water. Cover and simmer for 15-20 minutes, stirring occasionally.
- Stir the refried beans through the mixture and simmer for a further 10 minutes until the liquid has reduced and it gets a thicker consistency.
I love a big bowl of this chilli with rice and low fat cheese, only bad thing is when its all gone!
