Recipe: Chilli Con Carne

I love chilli, but I am not overly keen on the firmer texture of kidney beans, so I swap them for refried beans in my syn free chilli con carne recipe. 

Ingredients 

1 white onion 

1 red pepper 

500 extra lean beef mince 

2 tsp crushed garlic 

1 tsp chilli powder 

1 tsp smoked paprika 

½ tsp cayenne pepper  

Beef stock cube 

1 tsp sweetener 

1 tsp Worcestershire sauce 

1 carton of pasata 

2 tbs tomato puree 

1 can of refried beans 

 

  1. Finely dice the pepper and onion and fry in frylight until the onions are softened.
  2. Add the minced beef, garlic, chilli powder, paprika and cayenne pepper. Stir continuously to stop the mince sticking to the bottom of the pan. Use a wooden spoon or spatula to break any larger chunks of mince up. 
  3. Add the pasata, stock cube, Worcestershire sauce, tomato puree and 200ml of water. Cover and simmer for 15-20 minutes, stirring occasionally. 
  4. Stir the refried beans through the mixture and simmer for a further 10 minutes until the liquid has reduced and it gets a thicker consistency. 

 

I love a big bowl of this chilli with rice and low fat cheese, only bad thing is when its all gone!
