I am always on the look out for accompaniments to go with my slimming world friendly meals, to stop them from being repetitive. So after experimenting with syn free ketchup’s and salsas, i decided to make a chutney, and it was one of my better decisions!
1 finely diced red pepper
1 finely diced red onion
1 finely diced tomato
5 tablespoons white wine vinegar
3 tablespoons malt vinegar
2 tablespoons of sweetener
2 teaspoons salt
1 teaspoon smoked paprika
1 pint of water
Add all the ingredients to a pan and bring to a boil. Reduce the heat and leave to simmer until the mixture has reduced and creates a thick consistency.
I had this as a topping for my syn free burger tonight, but i can’t wait to do some more experimenting, I’m thinking on cheese on toast and cheesy, chutney topped chips?
