Roasted Red Pepper and Tomato Soup

You know those days where you just want a big cosy jumper, candles and comfort food? Those are the days I crave soup, and most of the time its tomato soup, the kind that warms you from the inside out. But at 10 syns a can, Heinz is well and truly off the menu.

This roasted red pepper and tomato soup is ready in 5 minutes, with practically no prep work, and tastier than a can of the ready made stuff!

Ingredients

1/2 jar of roasted red peppers in vinegar

1 carton of pasata

1 vegetable stock cube

500ml of water

1 tsp crushed garlic

1 tsp basil

1/2 tsp organo

1 tsp Worcestershire sauce

salt and pepper to taste

  1. drain the roasted red peppers and blend until smooth
  2. pour into a saucepan and add pasata, oregano, basil, garlic, Worcestershire sauce
  3. crush the stock cube and mix into the water, add this to tomato and pepper mix.
  4. simmer for 10-15 minutes, add salt and pepper

thats it! no chopping or peeling required for this recipe. The best way to serve this is with some cheesy chips (slimming world ones obvs!) for dunking.
